Located near Ueno-Hirokoji Station, it’s a top choice for exquisite sushi, boasting both first-class technique and surprisingly reasonable prices.
The Ultimate Edomae Sushi Experience
Ueno Sakae serves in the classic Edomae style, alternating between nigiri sushi and small appetizers (tsumami). The course opens with a Chūtoro (medium-fatty tuna) nigiri that melts in your mouth, captivating you from the first piece. This is followed by squid garnished with bamboo charcoal salt and citrus for a clean finish; a chewy Shima-aji (striped jack) that gets sweeter with each bite; and Hirame (flounder) paired with rose salt and citrus to enhance its natural flavor.
The grilled course features a fluffy and mild Gindara Saikyōyaki (miso-marinated black cod). Next, a Shime-saba (vinegared mackerel) offers a perfect balance of rich oils and refreshing yuzu aroma. The meal’s savory portion concludes with a Kinmedai Aburi (seared golden eye snapper) with soy sauce, whose charred fragrance and juicy texture make you crave a glass of sake.
The sushi rice (shari) is seasoned with red vinegar (akazu), achieving a delicate balance of acidity and umami. The nigiri are small but packed with flavor. We especially recommend the Kuruma Ebi (Japanese tiger prawn) nigiri, topped with a dab of rich shrimp miso (ebi miso). The blend of sweet shrimp and savory miso on the palate is enough to turn any first-time visitor into a regular.

Beyond the sushi, the restaurant’s small appetizers (tsumami) are also a highlight. The “Steamed Abalone with Liver Sauce” showcases rich layers of flavor through the tender abalone and aromatic liver sauce. The Tamagoyaki (Japanese rolled omelet) also leaves a deep impression; its surface is torched like a crème brûlée and it’s mixed with brown sugar, giving it a delicious, dessert-like quality.

Four private rooms also offer an excellent option for intimate gatherings or business dinners.

The restaurant offers three different set courses, from the “En Course” (approx. ¥13,200) to the “Kotobuki Course” (approx. ¥20,000).
