[Ikebukuro West Exit] Sumibiyaki Horumon Guu Ikebukuro Hanare | Raw beef, offal yakiniku, and all-you-can-drink courses
In the alleys of Ikebukuro West Exit, there is a yakiniku restaurant known for slow-grilling over binchotan charcoal. The store name can be translated as “Sumibiyaki Horumon Guu Ikebukuro Hanare,” which is a branch of the Guu group in Ikebukuro, with an atmosphere leaning towards a small hideaway for adults. The interior mixes silver-gray tones with wood, and the exhaust system clears the smoke effectively, so you won’t leave smelling like barbecue. The seating is primarily at the counter, and the lighting is not harsh, making it suitable for chatting while grilling. This is not a noisy, bustling yakiniku spot, but a place where you can keep the charcoal aroma at your table and eat at a leisurely pace.
The most unique aspect of this restaurant is that it has obtained the “Wagyu Raw Meat Handling Permit” certified by the Toshima City Public Health Center in Tokyo. This means they can legally handle fresh Wagyu parts for raw consumption. Consequently, the raw meat series on the menu has become a highlight. The signature “Ultimate Raw Beef Rice Bowl” features fresh Wagyu finely sliced and mixed with egg yolk and seasoning, offering a smooth texture and direct umami. There are also “Premium Raw Beef Rice Bowl,” “Raw Beef Tongue Yukhoe,” “Raw Beef Heart Yukhoe,” and a “Raw Meat Sashimi Platter.” These are items that can only be served under the certification of the Public Health Center, with freshness and hygiene standards more strictly controlled than in typical restaurants. Many people order the raw meat and then follow up with parts grilled over charcoal, with the entire experience providing a presence of Wagyu from cold to hot.
The charcoal-grilled section also focuses primarily on Wagyu. Binchotan charcoal gives the surface of the meat a fragrant aroma while keeping the inside juicy. The ‘Premium Skirt Steak’ is thick and rich in fat; when grilled until the surface is slightly charred, the fat begins to melt. The ‘Drinkable Loin’ uses A4 grade Wagyu; it is recommended to lightly sear it and pair it with the restaurant’s special sauce, as the texture is so tender it can almost be ‘drunk.’ Additionally, there is ‘Premium Beef Tongue,’ daily selected lean beef, and various offal cuts. Although offal is the restaurant’s signature, the Wagyu cuts are also carefully selected and not just filler.
For companions who do not eat beef, the restaurant also has corresponding options. The pork offal series includes ‘pork liver’ (freshly delivered from Shibaura), ‘pork jowl’ (a rare cut), and ‘pork cheek,’ etc. After being grilled over charcoal, the aroma of the fat is distinct, and the texture is different from beef, yet it shares the same charcoal-grilled charred aroma. Regarding vegetables and side dishes, the ‘Signature Lightly Pickled Kimchi’ is a staple; it is sour, crisp, and ordered by almost every table. The ‘House Salad’ and ‘Salted Kelp Salad’ use lettuce and cabbage paired with sesame oil or salted kelp, making them refreshing and not greasy. There are also ‘Vegetable Namul Platter,’ ‘Salted Pollock Roe,’ and ‘Pollock Roe Roll,’ which can be enjoyed as individual appetizers or with rice.
Rice dishes and finishing items are also suitable for those who do not eat beef. ‘Morioka Cold Noodles’ is the conclusion to many set meals; the soup base is refreshing and the noodles are chewy, making it very suitable after eating grilled meat. ‘Stone Pot Bibimbap’ and regular ‘Bibimbap’ are vegetable-based, and one can request less meat or no meat. ‘Rice with Special Sauce’ uses the restaurant’s special sauce, egg yolk, and green chili peppers paired with white rice; the flavor is concentrated, so there is no need to rely on meat. For soups, there is ‘Vegetable-Packed Egg Soup,’ which is mild and light. These choices allow those who do not eat beef to have a complete meal without having to eat only cabbage.
This restaurant puts health department-certified fresh Wagyu raw meat, Wagyu cuts slow-grilled over Binchotan charcoal, and practical pork offal and vegetable side dishes on the same menu. Those who want to eat Wagyu can start with a raw beef rice bowl, then move on to charcoal-grilled skirt steak or loin; companions who do not eat beef can order pork offal, lightly pickled kimchi, salads, and Morioka cold noodles, allowing both people to get what they need. The aroma of charcoal slowly spreads at the table, and the meat juices and fat sizzle on the grill, which is the most direct scenery here.
