[Shinjuku] Fresh offal and Wagyu on Binchotan charcoal grills: Sumibiyaki Horumon Guu Shinjuku

Walking into this underground space near the Shinjuku West Exit, the first thing you feel is not smoke, but the energy of the staff and the lively atmosphere of the restaurant. The restaurant’s motto is ‘Delicious, Energetic, Happy,’ a phrase written on almost every wall. Powerful exhaust pipes quickly draw away the charcoal smoke, so your clothes won’t easily smell like grilled meat, which is very practical for those who want to go somewhere else after eating. This is not a quiet, refined Wagyu restaurant, but a lively place where fresh offal and carefully selected Wagyu are placed together on Binchotan charcoal grills, perfect for a night of grilling and chatting with a group of friends.

The restaurant sources fresh uncooked offal from the Shibaura Market every day, which is the core of their signature menu. The most popular item is the platter known as the restaurant’s representative recommendation; it is affordably priced with a springy texture, and it is an item almost everyone orders on their first visit. The premium beef tripe has a distinct chewiness, and those who eat everything will especially love this resilient texture. Other parts are also well-stocked: thick-cut beef heart is grilled to a slight crisp on the surface while remaining elastic inside; beef small intestine is rich in fat and juicy; and beef thymus is creamy and smooth, belonging to the rare parts. There are also beef aorta, beef tracheal cartilage, and more, each with a different chew. These parts are mostly provided in two ways: salt or sauce, and you can adjust the heat according to your personal preference when grilling. The heat of the Binchotan charcoal gives the surface a layer of charred aroma while retaining elasticity and meat juices inside, which is the reason why this restaurant is memorable.

There are also clear choices for Wagyu beef parts. The ultimate thick-cut beef tongue is sliced quite thick, requiring a few extra chews to fully release the flavor; the ultimate skirt steak uses carefully selected Wagyu, with a balanced ratio of fat to lean meat and a distinct charcoal aroma. Special Wagyu lean beef, premium skirt steak, and drinkable ribeye (mostly A4 grade) also frequently appear in set menus. The restaurant also offers a Shinjuku-exclusive platter of eight types of special Wagyu lean beef and marbled beef, as well as the Kiwami Course (about seventeen items, including two hours of all-you-can-drink), which combines the ultimate thick-cut beef tongue, special Wagyu lean beef, premium skirt steak, and various offal, suitable for those who want to compare different parts at once. Overall, the Wagyu here does not pursue the highest level of rarity, but rather uses Binchotan charcoal to properly grill mid-to-high-end cuts to bring out the aroma, making the meal satisfying. The smoke from the charcoal and the fat blend on the shichirin grill, and when you bite into it, you get both the charred aroma on the outside and the fresh sweetness on the inside, which is the reason many people make a special trip to eat here.

If you have travel companions who do not eat beef, there are corresponding choices here. The menu has a complete section for pork offal: fresh pork liver delivered directly from Shibaura, pork jowl (a rare part where only about three hundred grams can be taken from one pig, which is crispy on the outside and juicy on the inside when grilled), pork cheek, pork stomach (crispy texture), pork intestine, etc. These items are mostly in the seven hundred to nine hundred yen range and can be ordered individually or paired with the offal platter in the set menu. In addition, the restaurant provides a large amount of cabbage and green onions for free, as well as their famous lightly pickled kimchi, daily sashimi, daily stew, Morioka cold noodles, and ice cream. By combining these vegetables, cold noodles, and pork offal, those who do not eat beef can also have a very rich meal without having to just sit on the side and watch others grill meat. The refreshing taste of the cold noodles and the sweetness of the ice cream can also perfectly balance the greasiness of the entire yakiniku meal.

The seating in the restaurant is mainly table seating, with some counter seats, and the atmosphere is more like a relaxed izakaya rather than the formality of a formal yakiniku restaurant. Powerful smoke extraction keeps the air relatively fresh, making it suitable for chatting while eating. The Tabelog rating is about three point five seven to three point six zero, with over five hundred reviews; the frequently mentioned advantages are freshness, charcoal aroma, and not-too-heavy smoke. The price generally falls in the four thousand to six thousand yen range, depending on whether you order a set menu and all-you-can-drink.

When eating yakiniku in the west side of Shinjuku Station, if you want to satisfy both the need to ‘eat fresh offal’ and ‘eat satisfying Wagyu’ at the same time, this restaurant handles both on the same shichirin grill quite directly. The heat of the Binchotan charcoal brings out the elasticity of the fresh offal and the fatty aroma of the Wagyu together, and paired with a large amount of vegetables and the final cold noodles or ice cream, it is a yakiniku meal that does not require too much ritual but is very satisfying. Sitting down, watching the charcoal fire on the shichirin slowly color the meat slices, and chatting while grilling is the most direct charm of this place.
