[Nishi-Nippori] Thirty-day aged Wagyu Yakiniku Aging Beef Nishi-Nippori Main Store
Stepping into this yakiniku restaurant in Nishi-Nippori, which prides itself on aged meat, the first thing you smell in the air is not just the scent of charcoal, but the rich, dense aroma released by meat that has slowly settled over time. The restaurant’s name, ‘Aged Wagyu Yakiniku Aging Beef Nishi-Nippori Main Store,’ speaks to exactly this: they let the Japanese black wagyu rest for about thirty days, allowing moisture to evaporate naturally and concentrating the umami, before slowly grilling it over charcoal to bring out layers of tenderness and fat. Known as Japan’s first yakiniku restaurant specializing in aged meat, the focus here is not on fancy presentation, but on the fact that the meat itself has become more tender and flavorful due to time.
Once seated, the charcoal grill on the table begins to heat up. It is recommended to start with the aged wagyu rib fingers and loin. The rib fingers have distinct marbling, and when grilled until the edges are slightly charred and fragrant, the fat slowly melts, making it rich but not greasy upon the first bite. The loin is a leaner cut, and its aroma is particularly pronounced after aging; paired with the restaurant’s special daikon with ponzu, the refreshing acidity perfectly balances the fat. Next, you can try rare cuts, such as the chestnut-shaped piece, the ‘inside’ section near the flank, or the chili-shaped lean meat that can only be obtained in very small quantities from a single cow. These cuts are rarely served individually, and their sweetness and tenderness are even more prominent after aging, making them perfect for those who want to compare different textures.
Beef tongue is also a highlight here. They age the beef tongue separately to further concentrate the umami, and there is a comparison platter featuring prime beef tongue and aged tongue, allowing you to experience two different types of elasticity and aroma at once. The version simply grilled with salt best captures the natural flavor of the meat; be careful not to overcook it, as keeping the center slightly pink is ideal. There is also a cold steak served raw-style after low-temperature processing, as well as house-made aged wagyu prosciutto, which has a rich aroma and is perfect for pairing with sake or beer as an appetizer.
The rhythm of the meal usually begins with side dishes and kimchi, followed by the meat. The kimchi comes in a platter of three: napa cabbage, radish, and cucumber, which is sour and appetizing; the seasoned bean sprouts and water spinach have a crisp texture, serving as a refreshing interval between meat courses. For rice, you can choose plain rice, or the stone-grilled garlic rice or stone-grilled bibimbap with aged wagyu; the hot pot bottom toasts the rice grains to a charred fragrance, which is especially delicious when mixed with the meat juices. Toward the end of the meal, you can order cold noodles to finish, available in Kishu plum or citrus versions; the sweet and sour broth clears the fat from your palate, providing a clean conclusion to the meal.
For travel companions who do not eat beef, this restaurant offers more than just beef. The menu includes Daisen chicken thigh, raised at the foot of the mountains and drinking natural groundwater; the meat is delicate with little fat, making it perfect for grilling with salt or a simple dipping sauce. There is also ice-aged Tonhime pork loin, which has a refreshing, non-greasy texture, and a mild aroma after aging that does not overpower the flavor of the beef. As for seafood, there is a shrimp and chive pancake with a crispy exterior and juicy filling, which pairs well with beer. For vegetarians or those who prefer something lighter, you can order more side dishes, kimchi, and cold noodles or soups, such as egg drop soup with rice or Korean-style soup with rice, which can fill you up without having to force yourself to eat beef. Set menus often include both chicken and pork, allowing everyone at the table to choose the meat they like, so no one is left just watching others eat.
The charm of this place lies in the transformation of the meat quality brought about by aging. The thirty-day rest allows the umami of the Japanese black wagyu to concentrate and the texture to become more tender, while the charcoal fire brings out the aroma of the outer layer; the combination of the two makes it taste more layered than regular wagyu. For those who want to seriously experience aged meat, from rib fingers, loin, and rare cuts to beef tongue, you can feel the influence of time on the meat; for companions who do not eat beef, the chicken, pork, seafood pancakes, and various side dishes are enough to support a complete meal. Sitting in this Nishi-Nippori shop, watching the meat on the charcoal slowly change color as heat and aroma rise together, is the most direct form of enjoyment.
