Located in Dogenzaka, Shibuya, Tokyo, ‘Chuka Soba Kiraku’ is a long-established ramen shop founded in 1952 (Showa 27), standing on this bustling land for over 70 years. The first-generation owner was Mr. Lin Zhanggui from Taiwan, and now it is managed by the second-generation owner, Mr. Lin Maofu, who, with the family’s inherited craftsmanship, creates Chinese cuisine with a strong Taiwanese flavor in this bustling city. Its signature dish, ‘Moyashi Wantanmen’ (Bean Sprout Wonton Noodles), is famous for its charred scallion oil and rich soy sauce broth, paired with rough medium-thick noodles, simple yet unforgettable.

Restaurant Features: A perfect collision of old-school

flavor and modern popularity. Stepping into Kiraku, time seems to flow back to the Showa era. The interior decoration is simple and unadorned, without fancy designs, but exudes a strong nostalgic atmosphere. The narrow counter and the seating area on the second floor are always crowded with eager diners, from young office workers to old customers who miss the taste of old times, everyone can find their own taste bud comfort here. There are often long queues outside the restaurant, especially during lunch and dinner peak hours, waiting for 20 to 30 minutes is the norm, but don’t worry, the table turnover rate here is quite high, patient waiting is definitely worth it.

Signature Dish: Moyashi Wantanmen, the Ultimate Enjoyment in Simplicity

Speaking of Kiraku, its signature ‘Moyashi Wantanmen’ (priced around 900 yen) is a must-mention. This bowl of noodles, at first glance ordinary, hides endless delicious magic. The broth is a clear soy sauce soup, deep in color but not overly salty, offering both rich animal-based umami and a hint of refreshing taste. The charred fried shallots floating on top not only add aroma but also give the soup a layer of oily texture, warming both the stomach and the heart.

The noodles are medium-thick curly noodles, slightly chewy, perfectly integrated with the soup, and every bite can feel the rich flavor of the soup absorbed by the noodles. It is topped with fresh bean sprouts, stir-fried crispy and juicy, paired with smooth wontons, creating a rich layer of taste. The wonton skin is thin and the filling is generous, made of pork, which is chewy and juicy, complementing the oily fragrance of the soup. Although there are not too many ingredients, this simplicity allows people to feel the ultimate balance of ingredients and technique.
