Heart Strings: A Quiet Drink in Nakasu, Fukuoka
When night falls in Nakasu, Fukuoka, the neon lights along the river ignite, filling the air with voices, music, and the hum of signs. Heart Strings is tucked away within this bustle, yet it keeps the noise at bay. Inside, the lighting is warm, like thin amber, with a long, heavy wooden bar and neatly arranged bottles. The music is kept low. Once seated, you mostly hear the sound of ice clinking against glass and a bar spoon turning against the rim. Selected for the 2022 bar top-100, it maintains a rating around 3.8 with 300-plus reviews. Most guests come here not for the noise, but to savor their drinks slowly.
The owner began at an old Nakasu bar in 1985 that had been open 60-plus years, honing their skills under a master before opening this shop in 1994. Having spent more than 30 years on this street, their technique remains simple and clear: measuring, icing, shaking, stirring, and straining into the glass—every step is precise. The bar is the heart of the shop, and those seated there can watch the entire process of their drink being made.
The drink menu mainly features classic cocktails. Mojitos are popular, generously using mint, with a refreshing fizz and balanced acidity that isn’t overly sweet. Dry martinis, Bloody Marys, Daiquiris, and Margaritas are also ordered, showcasing traditional flavors with distinct aromas and a clean finish. Wine is available but doesn’t overshadow the cocktails. If you’re unsure about what to order, just mention you want something refreshing or dry, or that you prefer a milder drink tonight, and the bartender will help you find the right match. This place is very welcoming to first-time visitors to a proper bar and won’t scare you off with a bunch of jargon.
The food here is taken more seriously than at many bars. The most popular item is the special pork fillet katsu sandwich, with thick, juicy pork cutlet, crispy batter, and a satisfying burst of meat juice with each bite, perfectly paired with a not-too-sweet drink. The special curry rice with seasonal grilled vegetables is a reliable late-night choice, allowing you to enjoy the taste of the drinks afterward. For appetizers, there’s prosciutto with seasonal salad and smoked duck, with vegetables paired with garlic sauce, using warm sauce to dip the seasonal veggies, balancing oiliness and garlic flavor just right.
Pasta comes in two styles: one with garlic and olive oil, and the other with homemade bacon in tomato sauce. The pizza is made with domestically produced wheat dough, chewy at the base, with anchovy tomato and blue cheese being common choices. Next are cheese, handmade bacon, salami, nuts, and homemade raw chocolate with raisin cream. Desserts are not overpowering, mainly meant to balance the drink’s finish, allowing you to linger here a bit longer.
Some people consider this place the last stop of their Nakasu night out. On weekdays, there are still seats available at the bar, perfect for quietly enjoying a drink before deciding whether to order another. Weekends see a slightly larger crowd, but you can still hear each other talk. The snacks are portioned to complement the drinks, not to fill you up; if you’re really hungry, a sandwich or a plate of curry rice will be enough to get you through the night. Whether you’re sitting alone at the bar watching the bartenders or chatting softly with a few friends on the sofa, it’s a great spot. While Nakasu has many bright, loud places, Heart Strings offers warm lighting, wooden decor, and a well-crafted drink, keeping the night outside.
