[Jiyugaoka] The Originator of Negi-shio (Scallion Salt) Yakiniku — Charcoal Yakiniku "Kankou"

Jiyugaoka is where the Tokyu Toyoko Line and Oimachi Line intersect. The streets are filled with stylish cafes and boutiques, offering a relaxed yet sophisticated atmosphere. Walking into the alleys slightly toward the residential area, you will see a building with a red brick exterior and a sign that reads “Kankou.” This is a long-standing shop that locals in Jiyugaoka refer to when they say “go there for yakiniku,” and it is also considered by many to be the originator of “Negi-shio (scallion salt) yakiniku.”

The interior space is calm, with both table seating and low-table tatami seating, suitable for friends or family to sit around together. The scent of charcoal drifts lightly in the air, and photos of various meat cuts are posted on the walls. The overall feeling is that of a yakiniku specialty shop that has settled over time, rather than a bustling, noisy chain store. The Tabelog rating is approximately 3.60, with nearly five hundred reviews and over thirty-eight thousand saves, consistently ranking it at the top among yakiniku restaurants in Jiyugaoka.

Negi-shio (scallion salt) yakiniku and thick-cut beef tongue

The signature dish here is “Negi-shio (scallion salt) yakiniku.” So-called Negi-shio yakiniku involves covering thick-cut meat with a large amount of finely chopped long scallions, then using salt to bring out the meat’s natural sweetness and aroma. The shop is very particular about how they handle the scallions; it is said that they spend about forty minutes carefully chopping the long scallions with two knives to fully release their aroma without making them too pungent. When spread over the meat, the scallions almost completely cover it, creating a very impactful visual.

The most popular item is the salt-grilled beef tongue. The beef tongue here is thick-cut, not the thin-sliced variety. It is served topped with scallions; it is recommended to grill one side first to let the scallion aroma infuse into the meat, then gently flip it. Once the surface is slightly charred and fragrant while the inside remains tender, pick it up, squeeze a little lemon on it, and upon biting, a distinct burst of meat juices and scallion aroma will emerge simultaneously. It is thick enough to have substance, yet not difficult to chew, offering a firm texture that is never dry. Many repeat customers order the special thick-cut salt-grilled beef tongue directly; it is the most representative dish here.

In addition to beef tongue, the salt-grilled rib fingers and salt-grilled skirt steak are also presented with a generous amount of scallion salt. The rib fingers contain fat, which pairs with the refreshing aroma of the scallions so it does not feel greasy; the skirt steak is springy and flavorful, suitable for those who enjoy a good chew. The special selection cuts have even softer meat quality and more even marbling, suitable for occasions where you want to have a serious meal. There are also offal options, such as premium beef tripe with spicy miso or salt-grilled beef large intestine, all of which are quickly grilled over charcoal and paired with the restaurant’s house-made seasonings.

Charcoal fire is the highlight here. Once the meat is placed on the grill, the fat on the surface slowly drips down, and the aroma is lifted by the charcoal fire. The restaurant provides seasonings tailored to different cuts rather than relying on a single sauce. The overall dining style leans towards ‘less sauce, more focus on the meat itself and the aroma of the scallions,’ which is the biggest difference between this place and many yakiniku restaurants that rely primarily on sauces.

How to order for travel companions who do not eat beef

If your companions do not want to eat beef for the time being, there are plenty of choices here, so you don’t have to rely solely on white rice or side dishes. Another signature dish of the restaurant is the ginseng chicken soup. This is a soup made by slowly simmering a whole chicken with ginseng, glutinous rice, and other ingredients; the portion is enough for three to four people to share and requires advance reservation. The broth is clear and sweet, and the chicken leg meat is tender, suitable for those who want to eat something mild. Although not everyone orders it, for travel companions who do not eat beef, it is the most satisfying item in the restaurant.

In addition, there is jidori chicken thigh, which can be grilled separately; it has moderate fat and a soft texture. Pork cuts such as pork ribs and pork jowl are also available at relatively affordable prices. For seafood, there are shrimp, squid, scallops, etc., which can be grilled together with vegetables. As for vegetables, there is a grilled vegetable platter, as well as various a la carte vegetables, suitable for those who want to eat something refreshing.

Regarding side dishes, the kimchi and seasoned vegetables are all homemade, with a moderate sour and fragrant taste that is not too salty. There are also various a la carte dishes that can be paired according to your mood that day. Overall, even if someone does not eat beef, they can still assemble a complete meal with ginseng chicken soup, chicken, pork, seafood, vegetables, and bibimbap or cold noodles.

On a night in Jiyugaoka, sitting in this red-brick exterior restaurant, watching the thick-cut beef tongue slowly change color over the charcoal fire, or waiting for a pot of ginseng chicken soup to be served, are both very direct pleasures. It is not the kind of restaurant that pursues flashy decor, but rather a place where the reputation accumulated through time and methods makes people want to visit again.
