Tokyo Kasuga Yoshoku | FRITTS (Yoshoku & Wine)
In the quiet shopping street near Kasuga and Korakuen, there is a yoshoku restaurant named “FRITTS (洋食・ワイン フリッツ).” The name comes from the French word “frites” (fried items). The owner, Mr. 田苗見賢太, trained for nearly fifteen years at “旬香亭” in Akasaka, Jiyugaoka, and Mejiro before taking over the name “FRITTS,” which once existed in Akasaka Mitsuke, and opened his own restaurant in 2016. This establishment has been consecutively selected as one of Tabelog’s top hundred yoshoku restaurants (in 2022, 2023, and 2025 EAST) and has been included in the Michelin Guide Tokyo for many years. It is a Japanese yoshoku restaurant that focuses on fried items while also emphasizing wine pairings.
The signature dish is the assorted fried platter. There are various combinations on the menu, and you can choose according to your preference from pork tenderloin, minced meat cutlet, fried shrimp, fried horse mackerel, fried oyster, crab cream croquette, etc., served with seasonal vegetable salad, white rice, and coffee or dessert after the meal. The most popular is usually the pork tenderloin. The restaurant uses US pork tenderloin, which is lightly tapped with the back of a knife to break the fibers before cutting, and then slowly deep-fried at a low temperature. The outer layer is thin and crispy, while the inside remains soft and juicy, with the cross-section showing a light pink color. When you bite into it, the fat and umami are released simultaneously without feeling greasy. Some say this is the ‘softest, least greasy pork tenderloin ever eaten’ because the control of heat and residual heat is very meticulous.
The minced meat cutlet is equally excellent. The breadcrumbs are coarser, making it crispier when fried; when cut open, the juices flow out noticeably without the heavy sensation often found in such dishes. The fried shrimp has a crispy coating and a springy texture, served with the restaurant’s homemade tartar sauce. The seasonal fried oysters are quite large and rich in flavor. While the crab flavor in the crab cream croquette is not overpowering, the richness of the cream pairs perfectly with the crispy crust. These fried dishes can be enjoyed with medium-thick sauce or salt, or simply on their own to highlight the natural sweetness and juiciness of the meat.
FRITTS is not only famous for its masterful frying techniques but also for perfecting every single yoshoku dish. Even the seemingly simple hamburger steak becomes incredibly delicious under the chef’s skillful preparation.Other options include crab macaroni gratin and beef tongue stew. The pairing with rice and salad is well-balanced; the salad vegetables are fresh and the dressing is light, ensuring it does not overshadow the main course. In the evening, the restaurant focuses on wine, offering a wide selection of glass and bottle options, including natural and Japanese wines, which pair perfectly with the richness of the fried dishes.
The croquettes and minced meat cutlets are especially recommended signature dishes. The minced meat cutlet, in particular, is made almost entirely of beef, and its intense meaty aroma and tender texture are unforgettable.
“Fried food made by a yoshoku chef is truly different,” because from the handling of the meat and the selection of breadcrumbs to the adjustment of oil temperature and the final residual heat, one can see the result of their many years of experience. The interior is intimate, with about fourteen seats, offering a quiet and comfortable atmosphere suitable for those who wish to enjoy a high-quality yoshoku meal in peace.
In the Kasuga area, if you are looking for a restaurant that takes Japanese-style Western fried food to the extreme, ‘Fritz’ is definitely worth a try. Sit down, watch that plate of golden assorted fried food being served, start with the softest pork tenderloin, and pair it with a bite of refreshing salad; that is the most direct charm of this place.
