AJE Matsubara Main Store | Salted Horumon Yakiniku by the Takase River

Located in Kawaramachi, Kyoto, AJE Matsubara Main Store (Yakiniku/Salted Horumon AJE Matsubara Main Store) is a yakiniku restaurant established in 1997. Tucked away in a quiet alley beside the Takase River, it serves as the flagship store for what would later become a chain with multiple locations across Kyoto and Tokyo. It has taken Kyoto by storm with its signature salted offal, attracting food lovers from all over the world. Step into this shop filled with smoke and laughter!

A casual yet warm atmosphere: Like dining at an old friend’s home

AJE Matsubara Main Store is full of the “Kyoto commoner’s soul.” The interior is filled with smoke, the aroma of grilled meat, the laughter of diners, and the shouts of the staff, instantly making you feel the vitality of the place. While the exterior and interior are a bit retro—even having that “old-school yakiniku shop” vibe—that is exactly where its charm lies! With wooden tables and chairs, simple wire mesh grills, and that blackboard listing the waiting list, the shop has 36 seats in total. It is suitable for solo diners or small gatherings with friends. Your clothes might pick up the scent of yakiniku, so wear something casual and join in the lively atmosphere!

Signature Dish: Salted Horumon, a Legend of Kyoto Yakiniku

Its signature “Beef Small Intestine (Salt)” is hailed as the “symbol of Kyoto’s offal yakiniku culture” and is a must-order for almost every table! The offal is meticulously prepared; the “hoso” (small intestine) is the small intestine of the cow. The shop purchases it daily, cleans it thoroughly, cuts it into thick slices, and serves it on a large platter sprinkled with special salt and green onions. As it grills, the fat drips onto the charcoal, occasionally causing flames to flare up. The exterior develops a charred aroma, while the inside remains tender and juicy, with a distinct sweetness that is never cloying. After being seasoned with the special salt and sizzling on the grill, every bite is packed with freshness, sweetness, and a satisfying chew. Enjoy it with dipping sauce to add layers to the oily, salty, and sweet flavors of the offal.

The Roast Yukke (seared beef with egg yolk) is coated in rich egg yolk and Kujo green onions, melting in your mouth. The “Horumon Yakisoba” (stir-fried offal noodles) features a perfect fusion of rich sauce and chewy noodles. Availability is subject to the daily menu.

More Than Just Offal: A Rich Menu to Keep You Going

From “Jo-Harami” (premium beef skirt steak) to “Tan-Shio” (salted beef tongue), every meat item is fresh and delicious. We especially recommend the “Jo-Tansuji” (premium beef tongue tendon), which has a tender texture that makes it impossible to stop at just one bite. The beef cheek is thinly sliced, offering a refreshing texture with a nice chew. Homemade kimchi and namul are essential sides; they are perfectly balanced in acidity and spice, generous in portion, and great for cleansing the palate. There are also raw options like Wagyu Roast Yukke. The overall style is “freshness first, seasoning that doesn’t overpower,” focusing on the ingredients themselves. Looking for an appetizer? The shop’s traditional kimchi is perfectly tangy and spicy with a huge portion, and the homemade bean sprout namul pairs perfectly with white rice! For drinks, Korean pear juice is sweet and refreshing—a perfect match for yakiniku. If you enjoy alcohol, they also offer sake and shochu to perfectly complement the hearty atmosphere of the yakiniku.

From an Alleyway Shop to a National Chain: The Legendary Story of AJE

AJE Matsubara Main Store opened in 1997 as the brand’s first location. The shop prioritizes daily procurement and meticulous pre-processing of offal, making a name for itself with its salted horumon. Today, AJE has expanded to other parts of Kyoto and even reached Gifu, Kanazawa, and Yurakucho in Tokyo, but the Matsubara Main Store remains the soul of the brand. It carries the local pursuit of “simple yet delicious” food at relatively affordable prices (approximately 4000 to 7000 yen per person). To eat yakiniku at AJE, sit down, order a plate of salted thin intestines, watch the fat sizzle on the charcoal, and pair it with kimchi and rice—that is the most authentic way to eat here. If you want to have a yakiniku meal in Kyoto where salted small intestine is the star and you don’t need fancy decor, this place is worth adding to your list.
