新橋 いっぱし: Toyosu Seafood, Fluffy Rolled Omelet, and Local Sake
There are many izakaya options in Shimbashi, Tokyo, and “いっぱし” focuses on seafood, rolled omelet, and local sake. Since opening in 2018, the owner has personally visited Toyosu Market every morning to select fish, serving the best white fish and seasonal ingredients of the day in a simple yet meticulous way. It has been selected as one of the top one hundred izakayas and remains on the list in 2025.
With such fresh ingredients, start with the sashimi platter. The aged red sea bream and yellowtail have firm flesh with a supple, oily texture; the umami spreads slowly in the mouth when bitten, unfolding in layers rather than hitting the nose immediately. The same platter includes horse mackerel, bigeye tuna, flounder, splendid alfonsino, Spanish mackerel, as well as seared salmon and raw jellyfish. The texture of the jellyfish is unexpectedly elastic, carrying a faint salty aroma of the sea, which contrasts with the aged white fish. The sashimi is arranged without an elaborate display, letting the character of each fish come through with every bite.
The signature rolled omelet that the restaurant claims is the “fluffiest in Japan”
A discussion of “いっぱし” would be incomplete without its signature dish—the “fluffiest rolled omelet in Japan”. This dish is characterized by its fluffy appearance; the golden rolled omelet looks as light as a cotton cloud. Paired with the dashi broth on the side, dipping it adds the gentle warmth of the broth to the eating experience. The saltiness is just right, the flavor is elegant, and first-time visitors can start with this signature dish, eating it slowly with the dashi.
Charcoal grilling is another highlight. The charcoal-grilled Hakata free-range chicken has a charred skin while remaining juicy inside, with fat and charcoal aroma overflowing when bitten. The grilled fish head of aged fish uses charcoal fire to slowly draw out the sweetness of the best parts of the white fish; paired with a little wasabi or yuzu kosho, the umami is even more pronounced. Pork saikyo-yaki, teriyaki chicken meatballs, and charcoal-grilled duck can also be seen on the menu, with the heat controlled just right so as not to dry out the meat.
The small dishes are also worth savoring slowly. The house-made sea bream miso has a high fish-to-miso ratio with restrained sweetness, making it a smooth pairing for both alcohol and rice. The raw water eggplant, eggplant dengaku with miso, grilled Kamiyama shiitake mushrooms, and thick fried tofu topped with plenty of aromatics bring a sense of the season to the table, ensuring the meal isn’t just about seafood. The fried dishes are also distinctive, featuring fried ginkgo nuts, fried burdock root, and shrimp with mayonnaise, all with a crispy exterior that is not greasy.
The selection of alcohol is equally rich. The owner carefully selects local sake and shochu from various regions, including hard-to-find labels like Kokuryu, Jikon, and Hiroki, as well as shochu such as Moriizo, Murao, and Maou. Paired with aged white-fleshed fish and charcoal-grilled dishes, one can find the perfect match in the sweetness of sake or the richness of shochu. Many people order the course meal, which progresses from sashimi, charcoal-grilled dishes, and small plates to the final ochazuke or cold noodles, with a pace that is neither rushed nor monotonous.
The restaurant’s atmosphere is lively in the style of an izakaya, yet not so noisy that conversation is impossible. Located in the basement, it offers a feeling of temporarily escaping the hustle and bustle of Shinbashi, and private rooms can accommodate gatherings of various sizes. What leaves the deepest impression is the balance between freshness and heat control: the fish is selected daily and processed after aging, the charcoal fire brings out the aroma without overpowering the flavor, and the small dishes use seasonal ingredients to add depth. After finishing a round, the freshness of the white-fleshed fish, the aroma of the charcoal fire, and the lingering finish of the sake remain in the mouth together.
If you are looking for an izakaya in Shinbashi that takes seafood seriously without feeling too formal, 新橋 いっぱし is a choice worth adding to your itinerary. Sit down, order a sashimi platter first, look at the color of the aged white-fleshed fish, and then slowly pair it with charcoal-grilled dishes and sake; that is the appeal of this restaurant at its simplest.
